As a self-proclaimed lemon enthusiast, I can't resist adding lemon juice and zest to brighten up everything from savory dinners to refreshing drinks and indulgent desserts. Basically, if I can add lemon to it, I do. When I first started experimenting with this recipe, I envisioned tossing whole lemons, lavender flowers, sugar, and water into a blender for an effortless creation. After all, I adore fuss-free recipes whenever possible! However, I soon discovered that using the entire lemon rendered the lemonade overly bitter, necessitating excessive sugar to balance the puckering taste. As I delved deeper into perfecting this recipe, additional steps were introduced, and the results improved exponentially. Ultimately, I struck the ideal balance of lemon peel, sugar, and lavender, resulting in the ultimate lavender lemonade cocktail!
Pro Tip: Lemon peels are bursting with natural oils that not only impart a robust citrus scent and flavor but also possess emulsifying properties when blended. An emulsion occurs when two liquids that don't typically blend seamlessly together unite into a uniform liquid through the aid of oil and vigorous mixing. By blending the lemon peels, the oils evenly coat each water molecule, yielding a lusciously creamy lemonade that remains emulsified even when left overnight in the refrigerator. Furthermore, I adore the rich flavor and vibrant color that the lemon peel imparts to this recipe!
Another thrilling component of this lavender lemonade cocktail is the lavender simple syrup. Creating your own simple syrup isn't as daunting as it may seem. Essentially, you gently heat water, sugar, and lavender flowers until the sugar dissolves. As the mixture simmers, the lavender flowers steep, infusing their delightful essence into the syrup, akin to a fragrant cup of tea. Once the lavender simple syrup reaches a simmer, remove it from the heat and strain out the lavender flowers once it cools to room temperature. It truly is that simple! However, if convenience is your preference, you can easily purchase Lavender Simple Syrup.
Fun Fact: Need another reason to welcome this cocktail into your life? Some small research studies suggest that consuming lavender may have a calming and relaxing effect. So, when you indulge in this lavender-infused, boozy lemonade by the pool on a warm weekend, you're not just treating your taste buds, but also finding a moment of tranquility and unwinding.
Now, let's bring the allure of the Lavender Lemonade Cocktail to your glass. Embrace this delightful twist on the classic lemonade by blending up some lemon peel lemonade, infusing it with lavender simple syrup, and, if you desire, adding a splash of vodka. Prepare to elevate your lemonade experience with this invigorating and delectable sip of summer!

Author: Kristin Bowman
Total Time: 15 Minutes
Yield: 5 - 6 cups
Lavender simple syrup: 1 1/2 cups of Lavender Simple Syrup (add more to taste if you want it sweeter)
Lemonade: 8 lemons 4 cups water 5 - 6 oz Vodka
Optional garnish: Lemon slices, dried lavender, sugar rim
Prepare the lemonade: Peel 2 lemons, then juice those two lemons together with the remaining 6. Add the yellow peels, lemon juice, and 4 cups water to a blender and blend on medium speed for about 1 minute, making sure the peels have become very small and the lemonade is creamy. Strain the blended lemonade into a serving pitcher and discard the strained lemon peel (it will be very pulp-like, but make sure you allow all the liquids to fully strain through).
Mix, chill, and serve: In serving pitcher, mix the simple syrup and lemonade together, then cover and chill in the refrigerator until ready to serve. When serving, pour the lavender lemonade into each glass and top off each drink with 0.5 - 1 oz of vodka, ice, and garnish with a lemon slice.
Note: you can choose to mix the vodka directly into the pitcher, I usually add the liquor to cocktails like this on a drink by drink basis so people who prefer non-alcoholic can enjoy the drink as well, and people can add their preferred amount of vodka.
